The Best Moist Banana Bread Recipe
Like most nana recipes, they often aren't the healthiest options (sugar, carbs, oil). I've taken the BEST moist banana bread recipe and, through trial and error, have perfected the healthier option that still tastes amazing!
This recipe substitutes applesauce for oil cutting the calories and fat as well as creating a different texture for the banana bread. We'll get in to this more shortly.
Fun little backstory:
This is my mother-in-law's recipe. When I first started making this moist banana bread, I could never get it right. The bread was always ruined someway somehow. As fate would have it, my mother in law "just so happened" to miss a few critical ingredients on the original recipe she provided. Anyone see the Everybody Loves Ray episode when Marie sabotages Deborah's meatballs by changing the label on the spices?? Yes, that happened to me in real life (though not really sabotage, but it sure felt like it!).
Solved the problem, so I'm sharing the correct recipe and can assure you, it's pretty fool proof and it's the BEST moist banana bread recipe out there.
The Recipe: Nana's Best Moist Banana Bread
Here's what you'll need to make this magical treat:
First, preheat oven to 365 degrees. Then, gather these items and follow the recipe below.
- 4 organic eggs
- 3 cups organic coconut sugar (or other high-quality sugar substitutes)
- 16 oz (2 cups) mashed bananas
- 1/2 cup of organic avocado oil
- 1/2 cup organic applesauce
- 2/3 cup water
- 3 1/3 cups organic flour
- 2 tsp baking soda
- 1 1/2 tsp salt
- 3 tbsp organic cinnamon
Beat together the eggs and sugar. Then, add the mashed bananas, avocado oil, applesauce, and water. Stir in the flour, baking soda, salt, and cinnamon. Mix until well blended.
Pour your mix into two bread pans lined with foil or parchment paper. Bake in preheated oven for 1 hour and 10 minutes. Note - oven times may vary. I typically only have my loaf pans in for about 50 minutes while the recipe says over an hour.
